Quinoa Veggie Stir-Fry with Steamed Sweet Potato

Ingredients:

  • 1 cup cooked quinoa

  • 1 medium sweet potato, steamed and diced

  • 1 small onion, chopped

  • 1 tomato, chopped

  • 1 green chili, chopped (adjust to taste)

  • 1 small carrot, diced

  • 1 small beetroot, diced

  • 1-2 tsp oil (olive or any cooking oil)

  • Salt, pepper, and spices as per taste (optional: cumin, coriander, or paprika)

Instructions:

  1. Prepare the vegetables: Steam the sweet potato until soft. Dice all the other vegetables (onion, tomato, carrot, beetroot).

  2. Lightly sauté: Heat oil in a pan and add the onion. Sauté for 2-3 minutes until slightly golden.

  3. Add veggies: Add carrot, beetroot, tomato, and chili. Stir-fry for 4-5 minutes until slightly tender.

  4. Add sweet potato & quinoa: Gently fold in the steamed sweet potato and cooked quinoa.

  5. Season & cook: Add salt, pepper, and any other spices you like. Stir for another 2-3 minutes until everything is well combined and heated through.

  6. Serve: Garnish with fresh herbs like coriander or parsley if desired. Serve hot as a wholesome meal on its own or as a side.
