Quinoa Veggie Stir-Fry with Steamed Sweet Potato

Ingredients:

1 cup cooked quinoa

1 medium sweet potato, steamed and diced

1 small onion, chopped

1 tomato, chopped

1 green chili, chopped (adjust to taste)

1 small carrot, diced

1 small beetroot, diced

1-2 tsp oil (olive or any cooking oil)

Salt, pepper, and spices as per taste (optional: cumin, coriander, or paprika)
Instructions:

Prepare the vegetables: Steam the sweet potato until soft. Dice all the other vegetables (onion, tomato, carrot, beetroot).

Lightly sauté: Heat oil in a pan and add the onion. Sauté for 2-3 minutes until slightly golden.

Add veggies: Add carrot, beetroot, tomato, and chili. Stir-fry for 4-5 minutes until slightly tender.
