Crispy Bitter Gourd Fry 😋 | Unique Karela Recipe with Masala Twist
Here’s a new way to enjoy bitter gourd! This Crispy Bitter Gourd Fry is not just fried karela — it’s loaded with a rich, aromatic masala made from garlic, dried red chillies, cumin, and nut powder. The flavor blends beautifully with the crispiness of the fried bitter gourd, making it a delicious and healthy Indian side dish.
🌿 Ingredients

Bitter gourd (Karela) – 4 to 5 medium-sized

Oil – for frying

Garlic – 6 to 8 cloves

Dried red chillies – 3 to 4

Cumin seeds (Jeera) – 1 tsp

Salt – to taste

Mixed nuts (peanuts, sesame, cashews, etc.) – 2 tbsp (roasted and powdered)

Curry leaves – few

Fresh coriander – for garnish
🍳 Method

Fry the Bitter Gourd:
Wash and slice the karela thinly.
Heat oil in a pan and fry the karela slices until they turn golden brown and crisp. Remove and keep aside. -
Make the Masala Paste:
In a small mixer jar, grind garlic, dried red chillies, cumin seeds, and salt into a coarse paste.
Mix in the roasted nut powder and blend once more to make a thick masala. -
Fry the Masala:
In the same pan, add a little oil and fry the prepared paste on medium flame until it releases aroma and the raw smell disappears. -
Combine and Final Fry:
Add the fried bitter gourd back into the pan and toss well with the roasted masala paste.
Fry everything together for a few minutes until the karela absorbs all the flavors and becomes slightly crispy again.
Add curry leaves and stir for a final aromatic touch. -
Serve Hot:
Garnish with fresh coriander and a few drops of lemon juice. Enjoy this crispy karela fry with rice, dal, or roti.
