🌿 Introduction

Dondakaya Fry (Tindora or Ivy Gourd Fry) is a classic and simple Andhra-style side dish. It’s crispy, mildly spiced, and goes perfectly with plain rice, dal, or curd rice. This traditional South Indian recipe brings homely comfort with every bite! 😋


🍳 Ingredients

  • Tindora / Ivy Gourd – 250 g

  • Onion – 1 (finely chopped)

  • Red chilli powder – 1 ½ tsp

  • Coriander powder – 1 tsp

  • Cumin powder – ½ tsp

  • Turmeric powder – a pinch

  • Salt – to taste

  • Oil – 2 tbsp

  • Curry leaves – few

  • Garlic paste – ½ tsp (optional)


🧂 Preparation Steps

  1. Wash and slice tindora lengthwise or round as you prefer.

  2. Heat oil in a pan, add curry leaves and garlic paste, sauté for a few seconds.

  3. Add chopped onions and fry until they turn golden brown.

  4. Now add tindora pieces, salt, and turmeric. Cover and cook on a low flame until soft.

  5. Once cooked, add red chilli powder, coriander powder, and cumin powder.

  6. Stir well and fry on medium flame until they turn crispy.

  7. Switch off the flame once they’re golden and crunchy.

Serve this Andhra-style Dondakaya Fry hot with steamed rice, dal, or roti.
