🥘 Ingredients:

2 cups chopped thotakura (amaranthus leaves)

1 handful makhana (fox nuts)

1 medium onion (finely chopped)

1 tomato (chopped)

2 green chillies (slit)

1 tsp mustard seeds

½ tsp cumin (jeera)

¼ tsp fenugreek (methi) seeds

Few curry leaves

Tamarind juice (from a small lemon-sized ball)

1 tsp red chilli powder
-
1 tsp coriander powder
-
½ tsp cumin powder
-
Salt to taste

2 tbsp oil
For the spice paste:

4–5 garlic cloves
-
Few curry leaves
-
2–3 dried red chillies

Prepare the tempering:
Heat oil in a pan. Add fenugreek seeds, mustard seeds, and jeera. Once they start to splutter, add onions, curry leaves, green chillies, and tomatoes. Sauté well until the tomatoes turn soft. -
Cook the greens:
Add the chopped amaranthus (thotakura) and fry until the leaves shrink and turn slightly brownish. -
Add spices:
Mix in salt, red chilli powder, coriander powder, and jeera powder. Stir and cook until everything blends together. -
Add tamarind juice:
Pour in the tamarind extract, mix well, and let it simmer until the raw smell disappears. -
Prepare the garlic paste:
In a small mixer jar, blend garlic, curry leaves, and dried red chillies into a coarse paste. -
Combine all:
Add this spice paste to the curry along with fried makhana. Cook for a few more minutes until the flavors come together beautifully.
