🌿 Makhana Thotakura Pulusu Curry | Healthy Andhra-Style Comfort Meal

🥘 Ingredients:

  • 2 cups chopped thotakura (amaranthus leaves)

  • 1 handful makhana (fox nuts)

  • 1 medium onion (finely chopped)

  • 1 tomato (chopped)

  • 2 green chillies (slit)

  • 1 tsp mustard seeds

  • ½ tsp cumin (jeera)

  • ¼ tsp fenugreek (methi) seeds

  • Few curry leaves

  • Tamarind juice (from a small lemon-sized ball)

  • 1 tsp red chilli powder

  • 1 tsp coriander powder

  • ½ tsp cumin powder

  • Salt to taste

  • 2 tbsp oil

For the spice paste:

  • 4–5 garlic cloves

  • Few curry leaves

  • 2–3 dried red chillies


👩‍🍳 Method:

  1. Prepare the tempering:
    Heat oil in a pan. Add fenugreek seeds, mustard seeds, and jeera. Once they start to splutter, add onions, curry leaves, green chillies, and tomatoes. Sauté well until the tomatoes turn soft.

  2. Cook the greens:
    Add the chopped amaranthus (thotakura) and fry until the leaves shrink and turn slightly brownish.

  3. Add spices:
    Mix in salt, red chilli powder, coriander powder, and jeera powder. Stir and cook until everything blends together.

  4. Add tamarind juice:
    Pour in the tamarind extract, mix well, and let it simmer until the raw smell disappears.

  5. Prepare the garlic paste:
    In a small mixer jar, blend garlic, curry leaves, and dried red chillies into a coarse paste.

  6. Combine all:
    Add this spice paste to the curry along with fried makhana. Cook for a few more minutes until the flavors come together beautifully.
