🌿 Thotakura Phool Makhana Curry | Ragi Sangati

🌿 Thotakura Phool Makhana Curry

Heat oil, add mustard, cumin, and a pinch of fenugreek.
Fry onions, curry leaves, and green chilies. Add chopped tomatoes and cook till soft.
Then mix in Thotakura (amaranthus leaves) and cook till wilted.
Add salt, red chili powder, coriander, and jeera powder. Pour in a little tamarind juice.
Meanwhile, make a paste of garlic, curry leaves, and dry red chilies — add it at the end along with lightly roasted makhana.
Mix well and cook till the curry thickens.

It’s rich, earthy, and perfectly pairs with Ragi Mudde! 🍛
